Maple Mustard Chicken Breast

This chicken dish brings me right back to childhood. My dad would make this meal with wild rice and steamed broccoli. This was also the first chicken recipe I learned how to cook! It has a sweet and savory flavor that’s great to add to rice, roasted veggies, salad or even on a sandwich. It is also so easy to make if you are as intimidating about cooking meat as I am.

Ingredients:

  • 1 lb of organic chicken breast

  • 2 tablespoons whole grain dijon mustard

  • 2 garlic cloves

  • ~ 1 tablespoon of maple syrup

  • Olive oil

  • Salt & pepper to taste

Directions:

  1. Unwrap the chicken breast and gentle wash it under cold water. Pat dry with a paper towel. Notice how it feels to hold meet. Maybe send some gratitude and appreciation to the chicken breast.

  2. Chop the chicken breast into even pieces. Use your intuition around size and shape. Having them around the same size helps to cook them evenly.

  3. Chop garlic. Notice the smells and textures while you peel the garlic. Notice your patience and focus while you chop.

  4. In a frying pan, put on medium heat. Once the pan heats up, add some olive oil and the chopped garlic. Notice the smells that come alive in your kitchen right away. Then add the chicken breast, salt & pepper.

  5. Let the chicken cook for about 5-7 minutes until you see the side facing the pan turn fully white.

  6. Flip the chicken and then add the mustard and maple syrup. Let this side cook for another 5 minutes. Keeping your eye on the heat, make sure the pan stays medium/high but doesn’t burn so adjust according to your stove top.

  7. Smell the sugar and mustard come alive. Keep stirring and flipping the chicken until it is fully cooked. You can use a thermometer to check the inside temp to be 165F or take a piece out of the pan, cut it open and check it is fully white and cooked. Use your intuition and if you like your chicken more dry, keep it cooking.

  8. Turn off the burner and let the chicken rest for a few minutes.

  9. Place this delicious dish on top of rice, salad, roasted veggies or even make a delicious sandwich out of it.

  10. Enjoy eating it mindfully.
