I am being mindful of my sugar intake these days to stabilize my blood sugar. This intention invites me to get more creative in the kitchen. Cookie dough is so comforting to me so I created this recipe to help my heart and taste buds enjoy some of the same flavors of raw cookie dough, yet be a lot healthier for my body. Enjoy this recipe and let me know how you like it.
Ingredients
2 cups almond flour. I used this Bob’s Red Mill Blanched Almond flour
1/3 cup Needed Collagen Protein. My favorite! (use code Center for 20% off)
1 tablespoon vanilla
2/3 cup SunButter
1/4 cup maple syrup
2 tablespoons almond milk
Pinch of sea salt
1/3 cup mini chocolate chips
2 tablespoons ground flaxseeds
Chocolate Coating
3/4 cup dark chocolate
2 tablespoons coconut oil
Directions
Mix all truffle ingredients until well combined. Notice the smells and texture. Does the cookie dough batter remind you of any memories or felt sensations?
Roll into 18 bite-sized balls (or whatever size makes you happy!) What does the texture feel like in your hands?
Melt the dark chocolate and coconut oil together until smooth. Notice the smells. Does the mouth water?
Dip each truffle into the chocolate and place on a parchment-lined tray.
Place in the freezer or refrigerate until the chocolate hardens.
Enjoy whenever you need a sweet treat or after your workout.
